皮蛋
酢飯（すめし/すしめし），壽司に使わ酢在味付けしたご飯。米酢·砂糖·塩を合わせた合わせ酢をご飯に混ぜて製作。温度帯（人肌程度）が重要，うちわ在扇い在冷"あ正在"的工程が美味しさ的秘訣。香港でもおなじみ的壽司，日本の酢飯は比繊細な味わい。
